These pigs are first doused in our mustard and vinegar marinade. Then, hand rubbed with our special, secret seasoning and allowed to rest in the refrigerator overnight. As the sun comes up, we set the pig on it's own rack in our smoker where it smokes low and slow until the juices flow.
We marinate your pig in our herb and citrus marinade and allow the flavors to seep deep into the meat. We cook the marinated pig in our ancient style Pig Box retaining all of the juices and moisture as it cooks to perfect tenderness and deliciousness.
Choose to have our Chef break down, carve and serve your roasted pig at your event. We cook your pig to absolute perfection either in the smoker or in the pig box. You want your guest to have it served the way that it should be served. Ask about this upscale service option.

Due to supply restraints for Smoked Holiday Turkeys and Hams. Thanksgiving orders must be received by November 12. Christmas orders must be received by December 6. A $50.00 deposit holds your order. Your deposit receipt is required for pick-up. All holiday orders will be available for cold pickup as requested, up to the day before the holiday. Re-heating directions included.

****NOTE: Smoked turkeys will have a "Smoke Ring". They will also have a reddish pink appearance in or near the joints as a result of the smoking process. Our turkeys are always cooked to 170 degrees internal temperature.
